Blackberry and Apple Souffle

These are extremely yummy!!!Be careful though, souffles deflate very easily! This recipe is from the 4 ingrediant cookbook.

ingrediants:
3 cups (12 ounces)blackberries
1 large cooking apple, peeled and finely diced
3 egg whites
3/4 cup caster (superfine) sugar

1.)Preheat oven to 400 degrees F. Put a baking sheet in th oven to heat.Cok the blackberries and apples in a pan for 10 minutes or until the juice runs from the blackberries and the apple has pulped down. Press through a sieve into a bowl. Stirin 1/4 cup of caster sugar. Se aside to cool.
2.)Put a spoonful of the fruit puree into each of 6 2/3 cup greased and sugared individual soufl dishes and smoth the surface. Set dishes aside.
3.) Whisk the egg whites in a large bowl until they form stiff peaks. Gradually whisk in the rest of the caster sugar. Fold in the remainng fruit puree and spoon the flavoured meringue into the prepared dishes. Level the top with a metal spatula and run a table knife around the edge of each dish.
4.) Place the soufle cups onto the hot baking sheet and bake for 10-15 minutes, until the soufles have risen well and are lightly browned. Dust the tops with a litle sugar and serve immediately!

I made this yesterday for a potluck. It made me popular. Thanks for posting it! Can you use other fruits instead of blueberries?
