Cultured Tuna Sandwich

Word of caution – Raw fish
Spicy rate of - 2


Serves 2

What you need:
Preferable pancake pan, or a flat pan
Cutting board
Knife
Container to marinate tune

Ingredients:
Crispy salad
1 – 2 slices tuna steaks that you can buy at your supermarket (I hope)
1 bush of coriander
1 bush of flat leaf parsley (or just any parsley will do)
1 bush of Celery (the herb)
1 lemon
Your choice of bread (Not sliced bread, think of French Bread)

For the sauce:
2 tablespoon yoghurt
4 tablespoons mayo
1 tablespoon Soy-sauce
1 Chilli pepper, removed of seeds and finally chopped

What to do:

A.)

1.) Put the tuna steaks in a container. Then finally chop all three herbs and put it with the tuna. Squeeze the juice of the lemon so that it covers the tuna on both sides and let it marinate for 5 – 10 minutes.

2.) Drizzle a little bit of oil on the pan, place it on the heat source till its really hot.

3.) Once really hot, place the marinated tuna (herbs and all) on the pan and count to 10, flip it over and count to 10 again.

4.) Let the tune cool and slice it into half an inch in thickness.

B.)

5.) Mix the mayo and the yoghurt with the soy-sauce and finally chopped chilli pepper (Tip: Use bell pepper finally chopped in place of chilli if your not a spice lover)

6.) Cut open your choice of bread and place a thin layer of salad, 3 slices of tuna; sprinkle some herbs used in marinate and finish it with a dollop of the spicy sauce.

Pork Tenderloin Sandwiches with Onion Relish

(6 sandwiches)

Ingredients:
1 pork tenderloin (about 1 lb)
Zest & juice of 1 lemon
1 large sweet onion, thinly sliced (Maui, Walla Walla, Mayan, Vidalia)
1 clove garlic, minced
3 tbsp balsamic vinegar
2 tsp italian seasoning
1½ tsp yellow mustard seed or coarsely ground mustard
3 tbsp olive oil
Salt & pepper to taste
6 buns, about 4” in diameter

What to do:
-Place pork tenderloin in a shallow pan. In a small bowl, combine the lemon zest & juice, onion, garlic, balsamic vinegar, italian seasoning, mustard, oil, salt & pepper.
-Pour over pork, marinading in the fridge for 1-4 hours. Remove the pork from the marinade, saving the marinade for later. Preheat oven to 350ºF.
-Place tenderloin in a heavy baking pan and roast for 45 minutes.
-While the pork is roasting, make the onion relish by pouring the reserved marinade in a saucepan and cooking over low heat for 15-20 minutes, until the onions are soft.
-When the pork is done, cool to room temperature and thinly slice on the diagonal. Serve on the bun with the onion chutney and whatever other condiments you wish.

Teriyaki burgers

2 thawed out burgers
1 bowl of mr. yoshida's teriyaki sauce

cook one burger on the stove for about five minutes, while the other burger absorbs yoshida's sauce in the bowl. Flip the sauce burger over so the other side absorbs it. After 5 more minutes switch the burgers so that the slightly cooked one goes into the sauce while the saucey one goes onto the pan. Do the same thing with other burger then switch. Keep this pattern up until the burgers are done.
