Tofu and fake meat gets old fast!!!

One of my personal favorites:

Vegtable stir fry:

what you need:
1 onion
1 red pepper
1 green pepper
2 cups of grape tomatoes(the yellow ones are extra good)
1-2 cloves of garlic
Salt to taste
Pepper to taste
Pinch of basil
Pinch of celery salt
About 2 teaspoons of olive oil
Zuchnni(sp?)
Yellow squash(adds a nice buttery taste)
Your favorite type of pasta(other than spagetti)
parmesan cheese

Directions:
sautee the vegtables in the oil season how you like (i.e. pepper salt etc)
boil pasta until tender
add tomatoes to vegtables when you add the pasta
add alittle more oil
season again
add garlic
stir (be careful not to burn it)
add cheese and let melt
stir more
serves about 2-4

Well, this has some tofu in it, but it is really really delicious!


MIXED MEDLEY STIR FRY
Servings: 6 servings of 1 cup each


Ingredients
3 Tbsp. sesame oil
1 large cloves garlic, minced
2 Tbsp. fresh ginger, grated
1 package Mori-Nu Silken Extra Firm Tofu, drained and cut into 1/2 inch cubes
1/4 lb. broccoli florets
1/4 lb. snow peas, stems trimmed
1/2 cup red pepper, slivered
1/2 cup yellow pepper, slivered
1/2 cup leek, thinly sliced
1/4 cup roasted peanuts
1 cup mushrooms, sliced
1 8 oz. can pineapple chunks, drained (reserve liquid)
1/2 cup Mandarin orange segments
1/4 cup light soy sauce
2 Tbsp. tomato sauce
1 Tbsp. cornstarch

Method
In sesame oil, saute garlic, ginger and tofu until lightly browned. Remove tofu and set aside. Add next 9 ingredients in order given. Stir fry until vegetables are just crisp-tender. Separately combine reserved pineapple liquid, soy sauce, tomato sauce and cornstarch until smooth. Stir into wok, thoroughly coating ingredients. Add tofu cubes. Serve hot over rice.

These are super fantastic! Its called the butter bean burger. It sounds gross, but it is really great!

INGREDIENTS

* 1 (15 ounce) can butter beans, drained
* 1 small onion, chopped
* 1 tablespoon finely chopped jalapeno pepper
* 6 saltine crackers, crushed
* 1 egg, beaten
* 1/2 cup shredded Cheddar cheese
* 1/4 teaspoon garlic powder
* salt and pepper to taste
* 1/4 cup vegetable oil


DIRECTIONS

1. In a medium bowl, mash butter beans. Mix in onion, jalapeno pepper, crushed crackers, egg, cheese, garlic powder, salt, and pepper. Divide into 4 equal parts, and shape into patties.
2. Heat oil in a large skillet over medium-high heat; use more or less oil to reach 1/4 inch in depth. Fry patties until golden, about 5 minutes on each side.

They can get a little messy when you make them, and you can subsitute the butter beans with black beans.
