One of my personal favorites:
Vegtable stir fry:
what you need: 1 onion 1 red pepper 1 green pepper 2 cups of grape tomatoes(the yellow ones are extra good) 1-2 cloves of garlic Salt to taste Pepper to taste Pinch of basil Pinch of celery salt About 2 teaspoons of olive oil Zuchnni(sp?) Yellow squash(adds a nice buttery taste) Your favorite type of pasta(other than spagetti) parmesan cheese
Directions: sautee the vegtables in the oil season how you like (i.e. pepper salt etc) boil pasta until tender add tomatoes to vegtables when you add the pasta add alittle more oil season again add garlic stir (be careful not to burn it) add cheese and let melt stir more serves about 2-4

These are super fantastic! Its called the butter bean burger. It sounds gross, but it is really great!
INGREDIENTS
* 1 (15 ounce) can butter beans, drained * 1 small onion, chopped * 1 tablespoon finely chopped jalapeno pepper * 6 saltine crackers, crushed * 1 egg, beaten * 1/2 cup shredded Cheddar cheese * 1/4 teaspoon garlic powder * salt and pepper to taste * 1/4 cup vegetable oil
DIRECTIONS
1. In a medium bowl, mash butter beans. Mix in onion, jalapeno pepper, crushed crackers, egg, cheese, garlic powder, salt, and pepper. Divide into 4 equal parts, and shape into patties. 2. Heat oil in a large skillet over medium-high heat; use more or less oil to reach 1/4 inch in depth. Fry patties until golden, about 5 minutes on each side.
They can get a little messy when you make them, and you can subsitute the butter beans with black beans.
