How does the Evolving Items work. I just bought the Death Whisper and wanted to know.

Every few weeks, whenever there's an announcement regarding evolving items, usually on Fridays, those types of evolving items will "evolve" into its next stage, where you'll be able to equip that item in new poses, while losing your old poses. Once your item goes through all of its stages, completing it's evolution, then all the stages' equipable poses will be unlocked for you to use. Depending on the item, the number of stages may vary.

What Locke said. Though I'll add that the most popular ones get quite expensive when retired, so pick up the ones you like best early.
If you're into investing, you can make a good chunk of gold off of older evolving items by picking them up early and selling them after they're retired.
