This is a delightful Thai soup that my mum makes all the time, and we all love. It has a lot of ingredients, and is a bit of an aquired taste, but it's quite good! So! here we go!
INGREDIENTS:
1 1/2 lb of raw prawns.
2 tbsp oil (canola, olive, or vegetable)
3-4 stalks of lemon grass, outer leaves removed, chopped coarsely
1 inch piece of ginger, peeled and diced
2-3 garlic cloves, peeled, crushed, and diced
a bit of coriander, remove the leaves, dice the stems.
1/2 tsp pepper
6 1/2 cups water
1-2 small chillies, seeds removed, finely chopped
4 spring onions, sliced on diagonals
1-2 tbsp fish sauce
1-2 tbsp lime juice
