There are, I think, as many ways to make a taco as there are illegal immigrants to tell you how. We're planning on having these this weekend (with a side of The Host, fawk yah), but I'm wondering if any of you maybe had a spin or a suggestion as to how to prepare them, specifically on cooking or spicing the meat. We're using carnitas, by the way. And keep the gringo s**t to yourself, if you please. There never has been, nor will there ever be any Taco Bell/Pace/El Paso seasoning in this house.

A neighbor of mine used to use Coca Cola in the meat as a meat tenderizer in his carnitas. It works better than most marketed tenderizors. Beer also works, but the flavor of Cola is an interesting adative to the meat. Compliments the already mildly sweet flavor of the pork, and IMO works great with the rest of the spices.

Understood. I don't recall the exact amount. (I eyeball everything when I cook. Maridah says I thrill-cook for the risk of it all) IF you've ever beer-marinated pork or meat, You'd substitute it for your beer, cooking wine, vinigar, or whathave you, so I'd say about a 1/4th to half cup if you're marinading, or just mix a bit of it into your cooking oil if you're going for the fried-pork aproach. Tends to work better if used as a marinade or if you're slow cooking.

Onions. Dive them or slice, depends on if you have picky eaters who would want to be able to pick them out or not. Thats usually good cooked with the meat. Marinating the meat, especially if it's a white meat (cicken tacos are good), in magarita mix or tequila. Chilli powder, paprika, cumin and garlic.
