My favorite openings are from When they Cry. The first one can be seen on my profile while the other one can be seen here.LINK As for endings
the hellsing OVAs have pretty cool endings also it's different each episode. (sorry no links)

Those ones are pretty cool, but as Haruhi would say; "What about the Moe?"

The Haruhi Ending and the Lucky Star Opening are both great!
