Big Fat Loaves of Bread
This is based on my Aunt's recipe for bread, which always comes out great.
It can be done just as the recipe says, or made more interesting by decorating it, adding different flavors, and twiting it into interesting shapes. For instance, I recently made a bread for Lughnasad by adding cinnamon and chunks of pear and twisting it into a spiral. Experiment!
For 2 Loaves....
Scald 2 1/2 CUPS MILK, pour into bowl with 3 TABLESPOONS BUTTER, OIL, OR SHORTENING,
3 TABLESPOONS HONEY, MOLASSES, OR SUGAR,
and 1 or 2 TEASPOONS SALT.
Add 2 1/2 CUPS COLD WATER - viola! Instant lukewarm!
Sprinkle 1 PACKAGE YEAST, or 2 if you are wealthy, over top, let stand 5 minutes.
Stir in as much WHOLE WHEAT FLOUR as you can stir in , in a comfortable and leisurely manner; then, applying 1 QUART ELBOW GREASE, work in and knead in WHITE FLOUR until you have a nice lump of dough.
Knead 10 minutes; let rise 1 hour in a greased bowl with a damp towel over it.
Form into loaves and place into two greased pans. Now cover them with the towel again; let them rise, but keep an eye on them or they'll get TOO big and fat.
When they rise about half an inch over their pans, start preheating the oven to 400 degrees farenheit.
Put them in when they rise just a bit higher and bake for 40 minutes.
