I'd have to go for viking metal in a general term, Black metal, Death metal, and power metal.

I can't really choose three, I also really don't like Grindcore.

Is that even considered a sub-genre of metal?

but the drumming in Grindcore is pretty good

symphonic metal: Epica, nightwish, Therion
Those would be Gothic Metal buddy, with the exception of Nightwish, who are also Power Metal. neutral

Tons of Information.

Symphonic is not a subgenre of metal, but rather reffers to musical arrangements, sorta like neo-classical guitar playing. Let me tell you, Wikipedia is not a good source for information about metal, or music in general.

what the hell is wikipedia???
and symphonic is nothing like neo-classical guitar playing

this is wikipedia.

And Symphonic is like Neo-classical in that both simply reffer to the way instrumentation is implemented in a certain genre, or in others the kind of atmosphere created by the music. For example Yngwie Malmsteen is Neo-Classical Power Metal, Rhapsody is Symphonic Power Metal, Amon Amarth is Melodic Death Metal.

(Melodic) Black
Folk
(Melodic) Death
+ Doom
and Gothic
Those make it five though.

Genre is not the most important thing to me, but I do have my favourites. Usually I don't like power metal nor grindcore, but almost all genres of music have good bands - that's what makes music so amazing.

Industrial
Ebm
Post-rock
+ Soundtracks from good movies. Well. Not a genre.
and Garage Punk
+ Garage Rock

They are my favourite genres from other music than metal. I'm not so "good" with genres though, I can't understand the small tiny little differences some genres have. And I end up insulting someone who does understand. c:
