Since people don't wanna share yet..I'll do the sharing! XD Here's my recipe for mashed potatoes with bacon bits ~
1 kilo potatoes, peeled (optional - chopped) 3/4 cup butter 1/2 cup evaporated milk 4 tbsp olive oil 1/2 kilo bacon water salt and pepper to taste
BACON ~ Saute the bacon in a frying pan with water (yes, water). The bacon should absorb the water then start to cook itself in its own fatty oils. Fry the bacon until slightly crispy. Remove from the pan and cut into bits. Set aside.
MASHED POTATOES ~ Boil the potatoes in a large casserole of water and olive oil over high heat until soft. Drain the water. Mash the potatoes with a potato masher, adding the butter and evaporated milk. Mash and mix until the butter and milk is incorporated into the potatoes. Season with salt and pepper and sprinkle with the bacon bits. Serve and enjoy.

I was recently diagnosed as Celiac/Casein together, so my foods have been quite limited as of late. xd
I already make (well, made) my mashed potatoes like you do apparently, and boy aren't they good. I gotta try the milk part with soy and see if it's still good. ^_^

Here's how to do a risotto like dish I just made. I'm eating it right now. xD
1/2 kilo beef sirloin, cut into strips 3-5 pieces Red Bell Peppers, cut into strips 1/4 kilo potatoes, diced (optional) 1 can button mushrooms, chopped 2 cups Arborio or Long Grain rice 1/4 cup oil 3 1/2 cups water 1 small can (around 200 mL) cream 1/2 cup quickmelt cheese
Beef - Boil the beef in salt water for 10 minutes. Drain and set aside.
Heat the oil in a medium to large saucepan. Saute the beef until tender. Add the mushroom and saute for 5 to 10 minutes. Add the rice, water, and cream. Stir to mix then let it heat until the water is almost completely evaporated. The rice should be a bit puffy by now. Add the quickmelt cheese and let it melt, stirring to mix. Add the peppers and potatoes and stir until potatoes are soft (cut a piece in half. If your knife or fork goes through it smoothly, it's soft enough) Stir for 5 more minutes then serve smile

Here's another one I recently concocted in our kitchen. I call it Samba Flambe (though this isn't a flambe dish... sweatdrop )
3 cups Arborio rice 5 red and green bell peppers, cut into strips 2 jalapeno peppers, cut into strips 6 cups tamarind juice (see my Sinigang Recipe) 4 tomatoes, cut into quarters 1 can button mushrooms, chopped olive oil
Saute the mushrooms in a large wok in olive oil for 8 minutes. Add the tomatoes and saute for 5 minutes. Add the rice and 3 cups of the tamarind juice. Mix a little then let it simmer until the juice is completely absorbed by the rice. Add all of the peppers and the remaining stock. Stir for 20 minutes or until the rice is cooked. Serve immediately.

haruchan's macaroni pie (GREAT FOR THANKSGIVING!!!!):
mix in a large bowl: 6 boxes of ritz bits crackers ya might wanna grind 'em...... 6 eggs 6 cups of water (if it isn't enough, add more eggs)
boil 2 boxes of craft mac&cheese (no, you have to take them OUT of the box)
line a rectangular quarter inch pan with the doughy crust stuff you made earlier..... your gonna need some for the crust, so save some or make more for the to
dump in the macaroni
(optional) add cheese (it doesn't matter what..... one time i even used string cheese 'cuz i was out of cheddar)
lay some crust stuff on the top of the macarono (it should look like a huge rectangular pie by now)
bake it at 350 degrees, constantly checking to see how the crust is...... sorry i forgot how long i baked this for.......
take it out, wait for it to cool and (optional) decorate with cheese whiz (you know the stuff in a can..... and you squirt it and it comes out like whipped cream but it's cheese).......
i made this for thanksgiving, a wedding, and another thanksgiving..... it was my first time making it and i improved as i went..... it took me like..... 6 hours to do the whole thing......
