Pepper Tofu
Ingredients
75g Silken Tofu, cut into small (1cmX1.5cm) rectangles
1C chopped vegetables (e.g. capsicum, beans, carrot)
1/2 brown onion, thinly sliced
pinch black pepper
For the sauce:
2Tbsp Pad Thai paste
2tsp Mapo Tofu paste
1tsp Kecap Manis (Sweet Soy Sauce)
pinch chilli flakes
2 drops Tabasco sauce
3Tbsp water
Cooking / Preparation Time
Cooking: 10 minutes
Preparation: 5 - 10 minutes

2 serves (Main)
4 serves (Filler)
Method
1. Heat a fry-pan over medium heat. Add tofu and cook on all sides until golden brown and crispy.
2. While you're cooking the tofu, combine sauce ingrediants and set aside in the fridge.
3. Once tofu is cooked, add the onion to the pan and cook until soft, seasoning with plenty of pepper.
4. Add vegetables, then sauce, and simmer for 5 minutes until sauce thickens.
It's a little time-comsuming, but it tastes pretty good if I do say so myself. blaugh
