My favorite quote has to be Kaetara's quote from the Water master episode:"YOU CAN'T KNOCK ME DOWN!" stressed I liked that quote alot. 4laugh

I have only seen three but I liked a few parts in the episode called Jet. I cant remember the exact words but its something like:
Sokka: (As there cut off and surrounded by fire nation soldires) Leave now and we promise not to hurt you.
Katara: What are you doing?
Sokka: Bluffing.
FNSoldire: You hurt us? (steps forward to hurt them and promptly bites the dust.)
Aang: Wow Sokka, how'd you do that?
Sokka: Uhh... Instinct?

First of all, I'd just like to say that just about every episode has awesome quotes, but here are some I could remember. 4laugh (GO AVATAR!)
Aang- "Hey Sokka, nice dress."
Aang- "Man, I hat walking. How do people get anywhere without a flying byson?"
Katara- "You know who you should ask about that, Sokka's instincts!"
Aang- "And I'm tired of carying this pack!"
Katara- "You know who you should ask to carry it for you, Sokka's instincts!"
Aang- "Hey, that's a great idea! Hey Sokka's instincts!"
Sokka- "Enough!"
Katara: I'm so sorry Aang, this is all my fault.
Aang: No Katara, it isn't.
General Iroh: Actually, yeah it kinda is.
Cabbage Merchant: My cabbages! Oooohhh... This place is worse than Omashu!
Uncle Iroh: Just give me ten minutes to check the merchandise at the sport of trade. Hopefully they'll have the lotus tile and I could get on with my life.
(Zuko breathes fire)
Uncle Iroh: I'm so lucky to have such an understanding nephew.
Uncle Iroh: Prince Zuko, you're really going get a kick out of this! The lotus tile was in my sleeve this whole time!
Prince Zuko (Enraged / He Throws the Lotus Time Into River and Hits a Pirate on the Head)
*and just that whole scene! rofl *
Sokka: (to a troop of firebenders) Let us pass, and we promise not to hurt you!
Katara: What are you doing?
Sokka: Bluffing.
Katara: Appa's not noticable.
Sokka: He's a giant, flying bison with an arrow on his head!
(Appa groans and flips on his side)
Aang (to Appa): Sokka's just jealous 'cause he doesn't have an arrow.
Jet: You fool! We could've freed this valley!
Sokka: Who would be free? Everyone would be dead.

It's not exactly a quote, it's when Aang is fighting off the pirates and Katara says 'Aang where are you?' and Aang says 'Here I am!' raising a fight cloud above him and he is in the middle of all the pirates...
I also like when Aang was performing in front of a crowd and they show the crowd and one guy is foaming with excitement.
I also like the Fortune teller episode when Aang says he is leaving to use the bathroom and after he hears who Katara is going to marry he enters the room with his chest puffed up and Sokka says 'Looks like someone had a good bathroom break.'
I found one quote that I like tho sweatdrop .
Katara: He's just upset because a bunch of girls kicked his butt yesterday.
Sokka: THEY SNUCK UP ON ME!
Katara: Right. And then they kicked your butt.
