Here's our family Snickerdoodle recipe--very easy, very fast, and depending on the size you make, yields LOTS of tasty snickerdoodles.... smile

Snickerdoodles durch Stoelph
(Snickerdoodles by the Stoelph Family)

1 1/2 cups of sugar
1 teaspoon of baking soda
1 cup of butter
1/4 teaspoon of salt
2 teaspoon of cream of tartar
2 eggs
2 teaspoon of ground cinnamon
2 3/4 cups of flour
2 tablespoons of sugar

Heat oven to 350 degrees. Mix the sugar, shortening and eggs in a large bowl. In a smaller bowl, mix together the flour, cream of tartar, baking soda and salt; when they are well-mixed, add them to the wet ingredients in the big bowl. Mix well but quickly; do not overbeat (in other words they don't have to be perfectly smooth; the cookies get tough if you over-beat.) Shape the mixture into small balls, no bigger than the palm of your hand when it is cupped. Mix the 2 extra tablespoons sugar with the cinnamon, until well-mixed. Roll the balls in this mixture to coat nicely.

Bake 8 to 10 minutes, or until the bottom is golden brown.

If you can get people to leave some of them uneaten overnight, and store them in a tin container while still warm, you will discover in the morning that they are incredibly yummy and "just right". Our Oma (grandma) used to hide some from us to teach us patience, and she would always say "Now see? Geduld ist ein bitterer Betrieb, aber sie hat eine süsse Frucht." (Patience is a bitter plant but has sweet fruit)

I believed until I was probably 5 that cookies grew in her garden and she just warmed them up in the oven. *grins*

Probably mostly what are called bar cookies in the US, because caramel is so nice and gooey it wouldn't work too well in a drop cookie. Bar cookies are made in a flat pan and cut into pieces. I found this one online a while back and experimented with it--if you like caramel, you'll love this. smile

Caramel Bars

* 1/2 cup melted margarine
* 1/2 cup melted butter
* 1 cup light brown sugar, firmly packed
* 1 cup chopped pecans or walnuts
* 18 graham crackers, halved

Directions:
Combine margarine, butter, brown sugar, and pecans in a medium saucepan. Bring to a full boil; boil for 3 minutes, stirring constantly. Set the caramel mixture aside. Line a jelly roll pan, 15x10x1-inch, with graham crackers. (This would probably work well if you crumbled the graham crackers, too, as you do for a pie crust--but in this case they want you to break the crackers apart and lay them in the pan.)

Spoon boiled butter and sugar mixture over graham crackers. Bake at 350° for 10 to 12 minutes. Cut caramel graham cracker cookie bars into squares.

Makes about 36 caramel graham cracker bar cookies. And boy are they good...

perhaps they have not checked out all the subforums, I have just gotten back into writing subforum as I have not posted there in ages. Perhaps they just have not gotten to it yet.
