Red Curry Sauce

1 tsp or so Cooking oil
2 tbsp red curry paste
1.5 cups coconut milk
2 tbsp brown sugar
Juice from 1tsp tamarind pulp soaked in 1 tablespoon warm water and strained.
1 tbsp Thai fish sauce

Heat oil in a medium saucepan. Add curry paste and stir for about 30 seconds. Add the coconut milk and continue stirring until the milk just begins to boil.

Reduce heat slightly and add the sugar, stirring until completely dissolved.

Stir in the tamarind juice and fish sauce and cook for 1 more minute.

NOTE: I thought I'd share this with you guys because it is an AWESOME way to spice up some plain rice. I usually cook Jasmine rice to go with it, but it can liven up anything, really. Since some of you guys seem to have to cook in single servings, this is a really awesome way to enjoy a quick meal.

I have two recipes to share with all of ya today.....One of them Is my Lemon Pepper Garlic Chicken, and the other is my Italian Meatballs.

Lemon Pepper Garlic Chicken:

4 chicken breast,completely thawed
Lemon Pepper Seasoning
1 good sized clove of garlic
Olive oil, extra virgin


Preparations:

Set oven to 375 and start by dicing the garlic. Drizzle EVOO over bottom of pan and put chicken breast down on the pan. Sprinkle the Lemon Pepper seasoning over the chicken and evenly spread garlic over the chicken. Don't worry if the garlic hit the bottom of the pan...Cover the pan with aluminum foil and put in the oven for 45 minutes.


Suggestions:

Served with mashed potatoes and french cut green beans.
Use juices from pan once done and make a gravy and be sure to use two pads of butter as compared to one. (it's so damn good!)


Italian Meat balls

1.5 lbs of ground beef
1 egg
1/2 cup of parmesean cheese
2 cups italian bread crumbs
2 big cloves of garlic
two pinches of kosher(recommended) salt
10 grinds pepper

Preparation:

Just mix the ingrediants and bake in a 350 degree oven for 15 minutes.

Served best with stuffed shells

Ok so i looooooove to cook pastries.. any new way i can make it, i will do my best to make it good. Just last weekend i took
2 Parts stawberries
1 part blackberries
1 part raspberries
1/2 part Gooseberries
added sugar and cooked into a thick sauce, then i took crepe sheets dabbed them with cheesecake creamcheese and then added pecans to the Creme Chese. Next spoon some fruit and juice and top the middle. Wrap it up, bake for minute to minute & 1/2. (untill just slighty brown) and top with sour cream/ whiped cream.

Ingrediants:
6 pita
Salt
Pepper
Essence
Parm-Cheese (freshly grated please)

Cut 6 pita in half to make 12 rounds then cut them into strips. Place on baking sheet, sprinkle with salt, pepper and essence. The put a few sprinkles of parm over each. Bake in preheated 350 oven for 10-15 minutes untill golden brown and crispy. Take out, let become warm, then eat or store and eat later

Spinach Lasagna (Fattening? Yes! Worth it? Totally!)


Ingredients:
1 pound sausage
5 tablespoons butter
5 tablespoons flour
1 tablespoon dried parsley
2 garlic cloves, minced
1 teaspoon salt
1/4 teaspoon pepper
3 1/2 cups milk, scalded
10 ounces frozen chopped spinach, thawed
1 1/2 cups small curd cottage cheese
1/2 cup Parmesan cheese, grated
1 teaspoon crushed basil
2 eggs, slightly beaten
1/3 cup heavy cream
6 lasagna noodles, cooked
2 cups mozzarella cheese, shredded
1/2 cup fine bread crumbs
2 tablespoons butter, melted
1/4 cup fresh parsley


Directions:
Preheat oven to 350 degrees.

In a large skillet over medium heat, brown sausage until no longer pink. Drain throughly and set aside.

In a medium saucepan over low heat, melt 5 tablespoons butter and blend in flour. Add dried parsley, garlic cloves, salt, pepper, and milk. Continue cooking until thickened about 3-5 minutes, stirring constantly. Set aside.

Place thawed spinach in a towel and squeeze to remove excess moisture. In a medium bowl add spinach, cottage cheese, Parmesan cheese, basil, eggs and cup cream; stir to blend.

Pour 1/3 cup sauce in bottom of 9' x 12' baking dish, then place 3 lasagna noodles, followed by half of spinach mixture and half of sausage, then 1 cup Mozzarella. Repeat layering, ending with sauce. Top mixture with bread crumbs, remaining melted butter and fresh parsley. Baked covered for 40 to 45 minutes. Remove cover for last 10 minutes to brown lightly on top.

Serving Size: 9

Salsa el Generic ((hee hee))

Cilantro (1/2 cup)
Garlic (3 cloves)
Red Onion (1/2)
White Onion (1/2)
Crushed Tomatos (1 can)
Cumin (1 tsp)
Salt (pinch)
Habenaro Pepper (1, seeded/cleaned, cut into small sticks)
1 pineapple ring (cut into pieces)

Mix all ingrediants in bowl, take and put in blender, buzz untill smooth
Serve with chips or on burgers, tacos or eggs

Blue Ribbon Three Cheese Stuffed Shells

Ingrediants:

8 oz Ricotta cheese
1 egg
1 1/2 cups shredded Mozzerella
1/2 cup Parmesean Regiano ( you can use regular if you like)
Any tomato sauce ( you're not getting my recipe for it...it's a big Scret)
12- 24 jumbo shells
1 tablespoon of Sourcream ( optional)
any spices you may want to add


Prepartation:

Boil water and put in shells until they are just before al dente. Drain and set to the side to cool. Put ricotta, 1 cup Mozzerella, egg, paremsean regiano( optional) and spices into a bowl and mix well. If you want it really creamy, add a table spoon of sour cream and incorporate into mixture. Set oven to 450. Take a piping bag or a spoon and use to insert the cheese mix into the shells. Normally makes enough for 12 or 13 well stuffed shells. Set shells in a pan ( recommened 9x9) and pour sauce around shells . Top with the other 1/2 cup of mozzerella and cover with tin foil. Place in oven for 25-30 minutes....This vaires by stoves...Mine normally take 35 because my oven is really old. You may want to check it at about fifteen minutes and go from there.

But there it is...It's my husbands favorite of my pasta dishes and he recommends that i make it whenever we have company. Hope you enjoy...Pm me if you make this and tell me how it turned out....

Bayou Stew with Chicken, Sausage and Rice

An easy, gumbo-like stew with fresh okra and spicy andouille sausage.
Estimated Times:
Preparation Time: 20 mins
Cook Time: 37 mins
Servings: 6

Ingredients
2 tablespoons vegetable oil
3/4 pound fresh boneless, skinless chicken thigh cutlets cut into 1/2-inch cubes
1/2 pound andouille sausage sliced into 1/4-inch rounds
1/4 pound okra trimmed and sliced
1 cup chopped peeled onions
1/2 cup thinly sliced celery
1/2 cup chopped seeded green bell peppers
1/2 teaspoon ground black pepper
1/2 teaspoon ground white pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon dry mustard
1/2 teaspoon dried thyme
1/2 teaspoon crushed dried basil
1/2 teaspoon salt
5 cups chicken broth
1 (14.5-oz.) can diced tomatoes drained
1 1/2 cups long-grain rice

Directions
Heat a large, heavy-bottomed pot over medium-high heat. Add oil and when hot, but not smoking, brown chicken and sausage until all sides are browned, about 7 minutes. Transfer to a paper towel-lined plate with a slotted spoon and set aside.

Add okra, onion, celery, bell pepper, black pepper, white pepper, cayenne pepper, dry mustard, thyme, basil and salt. Cook, stirring frequently, for 10 minutes, or until vegetables are soft. Stir in broth, tomatoes and rice and bring to a boil. Cover, reduce heat and simmer for 15 minutes, or until rice is tender. Add reserved chicken and sausage and simmer gently until thoroughly heated. Serve warm.

It's to die for! 3nodding I like to add some Louisiana Hot Sauce to mine. *Drools*

Hardly a recipe: Chicken

1 pkg. Zesty Italian salad dressing mix
Red wine vinegar
Olive oil
Water
Boneless skinless chicken breasts

Combine first four ingrediants as directed.
Marinade chicken for a few hours. (Or as long as you've got. The longer the better, but it's not too important.)
Grill slowly on low heat.

Orange Glorious:


INGREDIENTS:

* 1 cup milk
* 1 cup ice water
* 1 (6 ounce) can frozen orange juice concentrate
* 12 cubes ice
* 1/4 teaspoon vanilla extract
* 1/8 cup white sugar

DIRECTIONS:

1. In a blender combine milk, water, orange juice concentrate, ice cubes, vanilla and sugar. Blend until smooth. Pour into three 12 oz glasses and enjoy with a straw.

Cedar Planked Salmon
From "Weber's Art of the Grill" pg. 118

Ingrid.

1 untreated cedar plank
(about 16 by 8 in.)
--
1 whole salmon filet (with skin on)
1/4 cup white wine
Finely shredded zest and juice of 1 lemon
1/3 cup chopped fresh dill
1 tbsp kosher salt
1.5 tsp freshly ground pepper

Proc'd.

In a container large enough to hold the plank, immerse the plank in water for 1 hour or longer. Be sure to rinse afterwards.

Place the salmon fillet, skin side down, on a baking sheet with sides. (Any ol' dish will do as long as the salmon kinda fits. Silly specific recipe) In a small bowl, mix together the white wine, lemon zest, lemon juice, dill, salt, and pepper. Pour the mixture over the salmon. (I just dump stuff on the fish usually. lol. Less dishes.)Cover the salmon with plastic wrap and let refrigerate for half an hour.

Uncover the salmon and place it, skin side down, in the middle of the plank. Cook the salmon (on the plank..lol) indirectly over high heat until just opaque at the thickest part. 30 to 40 minutes.
