i scared a friend of mine when i started to sharpen my knives, i'm a trained chef and i'm wicked with a steel and knife stone (they are professional knife sharpening tools if you didn't know that already, a steel gives a good edge, but a carbon knife stone gives such a sharp edge, you can cut a wooden chopping board with it).

1) cover your roommate's desk and everything on it completely in post it notes (works on cars too)
2) while your roommate is out lay clear plastic on the floor and make up some fake blood (corn syrup and red food dye works great) shred a shirt roughly with a knife (make sure its an old shirt) and get another friend to smear you and the surroundings with the fake blood (including the floor under you), lie completely still and when your roommate comes back in they will be really freaked and come over to you, when they try to rouse you jump up at them and yell
3) (i did this at one of my friends colleges) climb into an empty frezzer that is unplugged (but hide the cord) and have a friend direct some people to the freezer (eg, make them ask to get something from the freezer) and when they open the lid jump up and yell, it scares the patoot out of them

when your roommate is out cling wrap the lowest section around the door so they trip as they come in
either that or when they are asleep (or drunk) cling wrap them to the bed

when your roomate is out or if you have a friend with a room of their own, get as much old newspaper as you can, shred or crumple it and fill their room up, i did this to one of my friends with about 50kg of newspaper, it took 4 hours and we had it piled to the ceiling (we had a massive dumpster out the back so it could be cleaned out easier), we also cling wrapped her cupboards shut, short sheeted her bed, araldited a pair of similar shoes to the floor in the corridor (we bought a cheap lookalike pair to do this) and we also rearranged all her furniture (before the newspaper this is)
another great this to do is get liquid nails and glue a $2 coin (in australia, or use a similar coin) to the floor and see how many people try and pick it up (we surrounded the majority of the coin in liquid nails so that it looked like a little volcano and couldn't be prised up with fingers). more than 100 people tried to pick up the coin
