Am I the only one who does reasearch around here?
OK HERE WE GO.
Where as in most final fantasys, the mythology is based around non-christian religions, Final Fantasy 7, had some basis around it. The very name Sephiroth is from some either hebrew or jewish legend. Anyways...
The one winged angels, also known as Nephilim were the childern of angels abandand by god, and banished to earth for loving mankind more then god. The angels banished to earth were called the Grigori. Jenova represents the Grigori in some aspects, and God in others by the very name relating to the Jehova's Witness idea of God's name being Jehova. Sephiroth being born of man and angel(Jenova) was of course a Nephilim, a one winged angel.
This is all related to events in the book of Enoch, a book excluded from the bible sometime in the early 1800s to 1600s, due to it's anti-god nature and showing how God obliterated an entire race of angels for simply loving mankind (and I mean in a frinedly way not in a relationship way, although that did start to happen later) more then him. The book is still in the bible in some parts of the world, and is commonly accepted as part of the book in most places that have it.
Thats why he has one wing, hes supposed to be a Nephilim. Ironically, that slightly means Final Fantasy 7, is a Man vs God conflict. What do you know.

I never really understood the whole consept of the one wing. My sis haas beaten the game over ??? times and told me over and over again. But for some reason when Zathina_mage typed the explanation of it, I understood!?!

Another way to see it is that before he went mad he was a very important man and help alot of people. the one wing kinda shows him as a fallen angel who went helping to well causing pain.

When they translated the game like usual they translated names wrong and safer sephiroth was actually meant to be Serph sephiroth which was probably from the name of the seraphim which had six wings two hiding their heads and two hiding their feet and finally two to fly on.
Lucifer apparantly had one of his wings ripped off when he was thrown from heaven, and was before the fall gods highest angel and was a seraphim, and so if you look at safer Sephiroth he has five wings and so this idea of him being heavenly and yet corrupted comes into play, the idea is also enhanced by the background which can relate to many famour paintings of god the seraphim and cheribum.
Thats the other belief that Ive heard of on why he is the one winged angel

ok...i've played KH2 and never noticed cloud having a wing...And with sephiroth, you got to play the game in order to understand why he has that wing...the damn b*****d killed me like 400billion times and I still can't beat him.
but it is curious as to why he has the one black wing.......

Ok, this is my opinion, assisted by the "Sephiroth" article on wikipedia.
Consider the fact Sephiroth mentions becoming a god in (I think) Disk One, while the party is at the Temple of the Ancients. Perhaps Safer Sephiroth (apparently a mistake in translation, I've heard the translation would be closer as Sepher) is Sephiroth just before he manifests himself as a god. If you look at Bizarro, Safer Sephiroth seems to be emerging from the 'cocoon' that is Bizarro.
Besides, the Seraphim are supposedly the most powerful choir of angels, and they had six wings. It makes sense that Sephiroth became a Seraphim, rather than another choir.
As for the Black wing, I can only speculate that is symbolises the evil in his heart, so he's a tainted angel, perhaps a fallen.
Or, not played FFVII for years, so may be rusty :S
