Hermione/Minerva: The appeal here is that of the student/teacher. It's surprisingly popular on livejournal. It's not so much the sex aspect of it, though. Most of the stories appeal to the comfortable romantic relationship between two strong-minded women.
Hermione/Pansy: Like Draco/Harry, this is one of those bad girl/good girl pairs. Pansy's obviously bright enough to become a prefect, and so when they go patroling the halls... who knows what could happen. One of the definitive fics of this pair is the notorious
Woman Eater by switchknife.
Be warned--- it's one of those adult fics. If you look at it from a literary/mature standpoint, though, it's beautiful and rich and terribly in-character.
Tonks/Luna: I never really read one of these fics, but I can sort of understand the appeal of the pairing. Luna's a bit odd and a social outcast. She needs a woman that can understand her or be patient enough to wade thought the murkyness of her statements. Luna seems like she'd be a good match for Tonks because she's odd enough to stay interesting and smart enough to keep up.
Hermione/Lavender: Lavender has a bit of a bad reputation with the diehard R/Hr fans just as Cho has a bad one with a lot of H/G fans. They call her a ditz and a tramp and clingy, but there were plenty of great moments where Lavender shows her positive, caring side. She's more of a femme in the world of HP girlslash, the loving, caring sort. She doesn't seem as care-free as Luna, but that added groundedness she has in addition to her light personality is something a girl like Hermione could benefit from. Eyore9990 wrote the fic

Fleur/Ginny: Again, one of those "I hate you, I love you" pairings. This one is a nice one because it inevitably means that Ginny must grow out of her old notions of Fleur and see her as a human, not just as a partially veela banshee. I believe that in DH if they have any interaction at all, Ginny will show more compassion. Hopefully, JK will have the two interact at least a little.
Cho/Fleur (Blurb By SilverZephyr)
I'm starting to see the appeal of Fleur/Cho. They're both exotic, pretty girls who have a popular sort of flair, but at the same time they're both kind though they get fired-up easily. Fleur is smart enough to be in the tri-wizard tournament, while Cho is a ravenclaw, so they can probably match each other in intelligence. Fleur is blunt while Cho is very sensitive, so the best-case scenario would involve them balancing each other out. Basically, they have a lot in common and are both the epitome of feminity, so they'd probably get along well, as friends at least.
Fleur seems like the type that gets what she wants--i.e. in GoF she was eyeing Bill, in DH she was marrying him. I can see a bit of conflict there at first, with Fleur being refined and a bit snotty to Tonks therefore, and them both being adventure-types in my mind I can see them becoming interested in how different the other is, and then maybe start a mild relationship--but eventually come to appreciate the other more for who they are (i.e. they're both eager to please) and then the relationship would deepen.
Luna/Ginny (Blurb By SilverZephyr)
The way Ginny is so normal, and Luna is so weird, but Ginny is always trying to understand Luna is just cute. Ginny's always sticking up for her and Luna's always talking about how nice Ginny is. Ginny can deal with Luna's oddities, and Luna's empathetic and patient, so she can deal with Ginny's temper. They're just full of fluff and cute and win, and there are just so many mental images and scenes you can put them in and just make it the cutest thing ever.
