After taking the poll, please post in the thread with comments, suggestions, or even your own recipes! Follow the format below, please.

It's my hope that this thread will be filled with favorite recipes from hidden family cookbooks, but simple recipes are also welcome! I will likely formulate my own cookbook out of ideas gathered here, so your recipe could very well make my family very happy! And for the love of Food, please stick around and chat! It's a lonely thread otherwise.

Recipe of the Week

Otakkun's Recipe
Name of Recipe: Ota's Waldorf Salad
Difficulty: Easy
Category (Dessert, Entree, Poultry, etc.): Side dish
Ingredients 4 ounces vanilla yogurt, 1 cup apple cider, 1 apple, 2 celery stalks, 2 handfulls chopped walnuts, a few leaves of iceberg lettuce
Recipe: Spoon yogurt onto a sheet of wax paper and spread it out fairly thing. About 1/2 inch in thickness. Let stand for five minutes, then scrape into a bowl and set in the fridge to chill.

Bring apple cider to boil until it is reduced to around 1/4 cup. It will be syrupy in consistency. Cool this completely. When I made this side dish, I did this first and then went on to make the main dish.

Once the yogurt and apple cider chills, whisk it together. Now chop the apple, celery, and walnuts and stir into the yogurt/cider.

To plate lay down a large leaf of iceberg lettuce and spoon some mixture on top of it.

Ingredients: 1 2/3 cup Whole Wheat Flour (or All-purpose flour)
1 tsp baking soda
¼ tsp baking powder
½ tsp salt
1/3 cup oil or 2/3 cup applesauce
½ cup sugar
2 eggs (or 4 egg whites)
1/3 cup water
3-4 bananas
½ cup walnuts, chopped (optional)
½ cup cranberries, chopped (optional)
Directions: Preheat oven to 350°. Grease a loaf pan.

Sift together the flour, baking soda, baking powder, and salt in a medium bowl. In a separate bowl, combine the sugar and oil. Add eggs. Mash the bananas and add that and the water to the wet mixture. Blend well for 30 seconds. Add dry ingredients. Evenly mix the walnuts and cranberries into the mixture.

Pour the batter into the greased pan and bake for 50-55 minutes or until a toothpick inserted in the middle comes out clean. Allow to cool before removing from pan.


That's one of the ones I got from Jeannie Chen. I collect banana bread and banana nut bread recipies.

Name: Chili tofu

difficulty: easy / moderate (depends on what you think, honestly. You'll just have to read it)

Catagory: uhmm..... guess it constitutes a vegetable probably.

ingredients:
4tbs vegetable oil,
4-6 pieces of firm tofu (but not hard, soft mouthfeel but will not break apart when poked, the ones in the big buckets work best),
1/2 head of garlic,
2tbs fresh ginger,
1tbs fermented black (soy) beans.
1tsp salt,
expendable amounts of soy sauce,
1 teaspoon cornstarch,
1-2tbs garlic chili sauce (I prefer lee kum kee),
1/2 piece of flank steak or other cheap lean bits of beef (optional),
MSG (optional)

recipe: This recipe depends on trial and error! There is no exact measurements because this is how the chinese cook! All proportions are generally to taste, you can add as little or much of stuff as you like.

heat up a large pan or wok to medium high or high.
Your piece of tofu should be about 1.5-2inches thick, and 4 or 5 inches by 4 to five inches. This is what the recipe relies and I guess it's pretty standard, I freestyled this and I enjoy it so I guess you guys can too. I live in a place with a populous asian community close by so it's easy to find this sort of tofu around here.
Drain your tofu and cut them according to this nifty diagram:

they should be about 1 inch cubes. I prefer using a meat cleaver, it's my all purpose knife.... you can use whatever as long as it gets the job done.

With your fank steak, cut them into pieces that are like 3 inches wide along the grain, then slice them at an angle against the grain into thin 3mm slices. Put them into a bowl and put about 2 tbspoon of soy sauce, or enough to cover all the pieces with soy sauce.
crush your garlic and peel them, then chop them up, crush and chop your ginger and then put them into the bowl with the beef.Take your black beans and give them a rinse then give them a slight smash before putting them in with the beef. You do not have to wait to marinate the meat. If you do not have meat, just stick garlic, ginger and black beans in a bowl without the soy sauce.

when your wok or pan is hot (spritz some water on the pan and if it sizzles up quickly then it's hot, if it beans up and it dances uncontrollably on your pan, it's too hot and you take it off the heat and when it's like the sentence above the too hot sentence, then put it back on the heat)
oil your pan and put your beef and herb stuff into the pan. use your spadula (metal please, not wooden or silicone) and evenly distribute the meat. When it gets a nice sear on one side, you can turn it around. you can push the meat around but do not let anything burn. Your pan might get glazed because of the soy sauce but it's okay as long as it's not burning. when the beef is almost done then add your chili sauce give it a quick stir. Put your tofu into the pan and push it around gently to not break up the pieces but coat them in the sauce and meats and herbs so they're not all at the bottom. then quickly cover your pan.
While waiting for it to cook, make your soy sauce slurry.
put in about 2tablespoons of soy sauce, with about one teaspoon of cornstarch and your MSG and salt. Put about a little less MSG than you do put in salt. I've gotten used to eyeballing the amount of salt, but you might need anywhere from 1 teaspoon to 1 and a half according to your taste. Make sure you get every bead of cornstarch or you'll get a gumpy ball.

When the pan has steam coming up quickly out of the lid, take off the lid and pour in your slurry mixture all around and use your spatula and mix around your tofu.

there you have it, pour it out, eat it and you could serve it with some cilantro if you want. serve it with rice.

Name of Recipe: Peppermint Hot Chocolate

Difficulty: Easy, as long as you can follow directions.

Category (Dessert, Entree, Poultry, etc.): Beverage/Dessert

Ingredients: 6 cups of milk, 1/2 teaspoon of peppermint extract, 1/2 pint heavy cream (you'll have to whip it yourself, don't try and cheat by buying whipped cream), 1 tablespoon cocoa powder, 2 bags of white chocolate chips, 2 tablespoons of confectioner's (powdered) sugar.

Optional ingredients: A package or two of mini M&M's and peppermint sticks.

Recipe: Combine cream, cocoa, and sugar in a large mixing bowl. Whip until it is stiff. Put in the refrigerator and let it chill while you make the rest of the hot chocolate.

Heat the milk and peppermint extract in a medium sauce pan until it is simmering (not boiling!). Slowly add white chocolate chips, stirring constantly, until they are melted.

Ladle into decorative mugs for best effect. Top with the chilled cream.

Optional: Sprinkle mini M&M's on top of the whipped cream and stick a peppermint stick into each mug for an especially festive and tasty display!
