_.~*Student Recipes*~._

This thread is aimed not just at students, but anyone who wants to start learning to cook. Cooking is a basic necessity, sure you can live off microwave meals and eating out but it's not exactly healthy for you. Plus there's always something nice about eating something you have cooked for yourself. It doesn't have to be a chore to cook something decent.

As students, we are not rich nor do we wanna be fussed about buying all the correct kitchen ware. So the recipes here are aimed at being both easy and cheap to make. Why not also share other recipes you have come up with each other ^^

Note, some of my resources come off a couple of cook books I own. Notably "The Australian Women's Weekly Cookbook" and "Nosh4Students". I highly recommend you buy the books for more information.

~*Money saving ideas*~

  • Buy things in bulk, separate the bits you're going to eat soon and put them in the fridge. Put the rest in the freezer. Below are storage times for various food in the freezer:
meat and poultry - 4 to 6 months
minced meat and minced poultry - 2 months
      oily fish - 3 months
      white fish - 6 months
prawns, crabs and lobsters - 2 months
fruit and vegetables - 6 months
cooked pasta and cooked rice - 2 months
cream, milk and cheese - 2 to 3 months
butter and margerine - 6 months
casseroles, soups and pies - 3 months
cakes, biscuits/cookies, breads and pastry - 3 to 4 months
      eggs - 6 months

  • Take advantage of special offers. Buying more than you need should be no problem as long as you have a freezer large enough to store the extra goodies.

  • Cook things in bulk as well, it's always easier to cook things in bulk than to say make 2 separate meals. Save the extras and put it in the fridge for re-heating the following day. If you share your house/aparment with other, perhaps set up a rota and take turns cooking for each other. This will mean you don't have to cook everyday.

  • Buy fruit and vegetables seasonally when they're cheaper. Below is a small list ^^:
      Apricot: Nov - Feb
      Artichoke: June - Nov
      Asparagus: Oct - June
      Blackberry: Dec - Mar
      Blueberry: Aug - May
      Raspberry: Nov - Jan
      Strawberry: Most of the year
      Fennel: Mar - Oct
      Lime: Mar - Sep
      Mandarin: Apr - Oct
      Mango: Oct - Mar
      Nectarine: Dec - Mar
      Navel Oranges: May - Oct
      Valencia Oranges: Sep - Apr
      Peach: Nov - Apr
      Plum: Dec - May
      Spinach: Mar - Nov

  • If you can find it, get non-stick oven sheets similar to these to use everytime you use your baking tray. This makes the food cook better as it doesn't stick to unescessary foil (this has saved me many headaches). You also save money on buying foil as you can simply re-use the sheet by washing it after each use.

~*Other useful notes*~

  • Oven temperatures will differ depending on where you live and what type of oven you have. If you own a fan assisted oven, you would usually need to reduce the temperature by 20°C/50°F/1 gas mark. Check your manufacturer's handbook though ^^;
Here is a quick conversion table you can refer to:
      120°C = 250°F = Gas Mark 1
      150°C = 300°F = Gas Mark 2
      160°C = 325°F = Gas Mark 3
      180-190°C = 350-375°F = Gas Mark 4
      200-210°C = 400-425°F = Gas Mark 5
      220-230°C = 450-475°F = Gas Mark 6
      240-250°C = 500-525°F = Gas Mark 7

  • If you eat a lot of rice, it's worth investing in a rice cooker as it makes perfect rice every time with minimal effort. All you need to do is measure the rice and water amount and set it to cook. The cooker will then do everything for you ^^

Makes for 2 depending on how much you want to eat XD

4 chicken legs
1 teaspoon mustard (more if desired)
2 teaspoon Worcestershire sauce
½ teaspoon brown sugar (can use white if no brown)
1 tablespoon tomato sauce/ketchup
salt and pepper to taste

1. Preheat oven to 180°C/350°F/Gas mark 4
2. Mix together everything but the chicken legs in a bowl
3. Baste (spread with a spoon) half the mixture on to the chicken legs
4. Place chicken on an oiled baking tray or casserole dish and place in oven for 20 minutes.
5. Remove chicken from oven and baste again with the other half of the mixture. Turn the chicken so it's sitting on the opposite side, then put back into the oven for another 20 minutes.
6. Serve with salad/potatoes/chips etc.

You mean microwave meals? :/ They're not exactly healthy and normally have a ton of preservatives in them.

Thanks though ^_^

ROASTED VEG

It's so easy.

Get some root vegetables, and cut them up into similar sized chunks

Put em in a zip up food bag with some olive oil and rosemary (use other herbs if you like, a little dried chilli is niiccee)

Shake bag so veg is covered with the oil

Put on a roasting tray (like a baking tray but a bit deeper)
Place in a medium-high pre heated oven, and depending on how small/large you cut the veg, cook for:

Small: 25-45mins
Medium: 45-60mins
Large: Longer...

Make sure you check them every now and again, turn them over, poke em with a knife.

You will know when they are cooked cause they will be soft.

----
The other day I made a tuna-sweetcorn-tomato-eggy thing.

Small tin of drained tuna (IN BRINE DAMMNIT) into a oiled pan(you don't need much) , add about 1/4-1/2 tin of sweetcorn and mix. Then add a couple of garlic cloves aaannnd.. Tomato puree+ketcup (not too much!)
Mix then add an egg, mix again.

Serve with salt, pepper and parsely.

It's FULL of protien.

I do similar things with egg. I find whatever I can in the cupboards and mix them with egg to make an omelette of sorts. Good for when you're feeling lazy to shop It truly makes a meal out of anything whee

Easy veggie stir fry.

1 onion, sliced
Vegetables in similar sized pieces* (cabbage is also good)
Noodles (any kind, straight to wok is easiest, cook dry noodles before adding to pan)
Nuts/seeds (optional)
Garlic

For sauce:
Clear Honey (to taste)
Soy Sauce(several tbsp)
Oyster Sauce (1-2tsp)
Chili sauce/powder (optional)

Heat a wok or deep pan (you can get woks rly cheap now) and add some sunflower oil.
When that is hot too, add the onion
When the onion is softened, add vegetables (hardest first) and garlic
When they are cooked (don't overcook them), add noodles, nuts/seeds and the sauce (add more soy if your sauce doesn't cover everything)
Heat that for a bit and serve

*Vegetables you can choose from:
Broccoli
Peppers
Carrots
Baby corn
Mange tout
Pak choi
Peas
Sprouts
Celery
etc.
