Mango sounds so yummy right now... I haven't had mango in years.

Curried Chicken Rice
(The serving is for one person, but can easily be doubled or tripled!)

Difficulty: stressed

Step 1: Grill 1 boneless skinless chicken breast, I recomend cutting it into cubes before grilling so that it cooks faster (or buy already cooked chicken).

While chicken is cooking, start boiling 1/2 cup of white rice in 1 and 1/4 cups of chicken stalk. Add in any chopped up veggies you may like, I recomend celery, carrots, and green onions. Add in 1 tsp of curry powder ... or less if you want it less spicy (you can also add in salt, pepper, and whatever other seasoings you see fit).

Step 2: Once the above mixture has come to a boil, add in the chicken breast, reduce it to medium heat, and cover. Stir it occssionaly untill all the liquid is gone.

Step 3: Pour it into a big bowl and enjoy!! Or put it in a countainer for tommorow ... it's just as yummy warmed up!

For a vegetarian option, leave out the chicken breast and use vegetable stock instead of chicken stock.

Mozarella Lovers Breakfast

^ I really have no good title for this, but it's yummy xD

Difficulty: heart
Serves: I use an 8 oz. ball of mozarella, and that serves 1-2 hungry people xD
Ingredients:
A ball of fresh mozarella
Tomatoes [usually 2 or 3]
Any spices you wish (I use basil and black pepper)
Olive oil

Procedure:

Take the mozarella and cut it into slices, about 1/4 to 1/2 of an inch in thickness.
Lay the slices on a large plate, or whatever you wish to serve it on, without layering them on top of each other. (The plate should not be completely flat)
Cut your tomatoes into slices and lay them over the mozarella. The tomato should cover the better part of your cheese.
Add whatever spices you want to each tomato/cheese sandwhich
Cover everything with as much olive oil as you wish. Mozarella is a bit of a dry cheese, so I recommend not being conservative with the oil.

Note: Throwing everything in a large bowl also makes it a nice salad xD

Questionable Genius

Difficulty: heart
Appliances: a stove, a microwave if you suck like me (not necessary), a fridge if you want to store them

Ingredients:
about one sleeve of soda crackers (salted or not)
chocolate chips
about 1/2 cup butter (salted or not. If your crackers are salted I'd use unsalted butter and vice versa)
3/4 cup brown sugar
topping if you want (icing sugar, white sugar, shaved almonds, whatever)

Prep time: 15 minutes on a bad day

Procedure:
Preheat oven to 350
Lay your soda crackers flat on a cookie sheet that has been covered in tin foil.
Heat the butter until it is liquid-y, and mix it with the brown sugar until you get a thick liquid. It needs to be spreadable.
Spread the butter-sugar mixture onto the crackers and heat them in the oven for five to ten minutes. You want the crackers to be saturated, but not cooked.
After heating, sprinkle chocolate chips thickly on the crackers and heat it in the oven until they begin to melt (about 30-45 seconds, you don't even need to shut the oven door, just watch them) OR put the crackers on a plate and heat them in the microwave. The chips should be soft, but not have melted all over.
Spread the chocolate with a knife until the crackers are all coated.
Sprinkle with topping if desired.
Let the crackers cool, remove them from the cookie sheet and refridgerate until you want them.

Servings depend on how many crackers you use, which depends on the size of the cookie sheet. Probably 20+bars.

It doesn't if you make a slit in the packet and drain it before taking it out ^^' I guess I forgot to mention that part sweatdrop
Shrimp, Meat, and Pasta = The shiznit!

About a dozen pork chops, cut up into tiny squares and cooked until they are a dark color.
A lot of pasta [i dont know]
already cooked shrimp cut into little pieces.
Salt and Pepper to taste.
some lemon juice.

Directions:

Turn on the stove and warm up a pan with butter in it, once that happens cook the pork chops. Add the shrimp and cook them together. As the two of them cook, put water on and salt it. Once water is boiling add pasta and cook until Al Dente than drain the pasta and put the pasta into a bowl big enough for everything to fit into. Than add the pork chops and shrimp, mix together and than put a little bit of salt and pepper in. After that put some lemon juice over that and serve.

Cook on the stove by the way.
Spam Onigiri

These are sometimes sold in Hawaii. My stepmother makes them.

Level of difficulty stressed stressed (it gets kinda messy...)

You're gonna need:

-Sushi rice
-Rice cooker
-Nori (processed, dry seaweed)
-Can of Spam
-Knife
-Pan or griddle
-Refrigerator

Note: DO NOT EVER USE LEFTOVER RICE (I learned this the hard way) because it will be kinda dry and crumbly. AND NEVER USE BROWN RICE OR LONG-GRAIN RICE OR REGULAR STICKY RICE. Because it won't have as much sticking power at sushi rice. You can buy rice specifically for sushi at some specialty stores, or you can mix a little rice vinegar in it to make it a bit stickier.

Anyway, follow the directions for cooking rice on the back of the bag of rice. Usually, you should use 1 and 1/2 cups of rice and 2 cups of water. While your rice is cooking, slice the Spam into pieces that are no more than 1/4-inch thick. I prefer thinner slices, myself. Fry them in the pan until they are thoroughly hot and somewhat crispy on the outside. Separate the nori into long strips. You can buy nori in some Asian supermarkets. It's usually perforated. If it isn't, then cut some strips about 1 inch thick with your knife. When your rice is done, then take about a couple of tablespoons full of rice, mold it into a rectangular or triangle shape, and place the Spam on top of the beds of rice. While the rice is still warm, wrap the nori around it. Chill in the refrigerator if you like before serving. Fantastic for lunch!

Bagel Pizza

Level of difficulty: heart

What you need:
- preferably a toaster oven, but a microwave works
- plain bagel
- cheese slices (I use american yellow)
- peperoni slices

Cut the bagel in half. Then put a slice of cheese on top of each half, the peperoni on top of that. Stick it in the toaster oven until cooked (2-3 minutes). If using a microwave, you'll probably only need to put it in for a minute or so.
